Guatemalan/Mexican Chicken and Rice Soup




I thought since it is getting to be cold and flu season it would be a good time to post a yummy chicken soup recipe. This is one of our favorites and has some healing ingredients as well, garlic (natural antibiotic), lime juice and green pepper (Vit C) and chicken broth (just feels good on a sore throat). Hope you all enjoy!

GUATEMALAN/MEXICAN CHICKEN AND RICE SOUP
1 med onion, diced
1 lg carrot, diced
1/2 pablano or bell pepper
1 T oil
2 cloves garlic, minced
1/4 t black pepper
1/4 c cilantro, choppped
1 chayote squash, cubed
2 c cooked chicken, shredded
2 plum tomatoes, chopped
1-2 T jalapeno, seeded (optional)
1 t cumin
8 c chicken broth
juice of 1 lime
1 1/2c cooked rice
1 avocado, sliced
tortilla strips

Season raw chicken with Ortega's taco seasoning, boil. Strain and reserve broth. Shred chicken and set aside. Saute onion, carrot, green pepper, garlic, squash and tomato. Stir in chicken broth. Bring to a boil and redue heat, simmer 20 min. Stir in chicken, lime juice and cilantro. Add cooked rice as desired. Serve with sliced avocado and tortilla strips on top.
